Rocket/Orange salad and mushroom risotto

Mushroom risotto made with Swiss brown mushrooms pan-fried separately
(and finished with lemon juice) and then added to rice after 18 mins.
Wine was a sweet bubbly wine (a happy accident as it added a sweet
undertone to the risotto) and vegetarian beef stock. Just fantastic.

Salad had rocket, segmented oranges and thinly-sliced Parmesan.
Dressed with olive oil and balsamic reduction.
